Chef Hrant Arakelian has built his career cooking all types of cuisines across a range of Nashville restaurants. When it was time to open his own, the Lebanese-born chef returned to his roots, and then updated them. At Lyra, he puts a modern interpretation on Middle Eastern cuisine, meaning a kibbe dish can be made not from raw meat but carrots, and the puffy, steam-filled pita breads might arrive with a lamb merguez-dotted hummus. Go for the reinterpreted classic dishes, like the lamb kefta or an outstanding, whole roasted baba ghanoush, which is satisfyingly familiar and full of rich and earthy spices.
